Hailing from the small town of Chaumuzy, Champagne Salmon is a three-generation winemaking family founded in 1958. They exclusively maintained their grower-producer status for the last 30 years, keeping things small and always “in the family”. They farm 10 hectares (85% of which is planted to pinot meunier) situated in the Vallée de l’Ardre, a commune on the western edge of the Montagne de Reims, roughly halfway between Epernay and the city of Reims. The differences are simply staggering and fascinating to behold. Stephane had this to say about these wines, “It is very rare to find vintage verticals, which is more pure Pinot Noir, hence this desire to demonstrate that a good wine has several qualities: It ages, well and long. If it has a natural acidity, it allows it to stay fresh and lively in its aging time without drying the mouth.”

We loved finding the nuances between these wines, but there is certainly some shared characteristics too. This is a micro-production of a mere 300 cases, aged for 6 years on the lees, and just boggles the mind with how complex, tasty, and unique a thing this is!

Dick discovered this rare clone of pinot noir in the village of Wrotham, Kent in southeastern England. There, in the 1950s, a single 200-year-old wild vine was traced back to the Roman Empire, who had brought the vines to England over 2000 years ago. That vine was used to create an acre vineyard in the region and kickstarted the now booming sparkling wine industry in England. Upon tasting a Kent “blanc de noir” made from this ancient, unknown clone, Dick loved the wine so much that he brought the Wrotham cuttings to California in 1980. After years of quarantine, he began propagating a vineyard from the Wrotham bud wood on his family’s Christmas tree farm in Yountville. After careful years of growing the vineyard, Dick reached out to UC Davis’ Carole Meredith to investigate the “wooly grapevine” that had grapes like pinot on a vine that looked entirely unique. Carole confirmed the grape was, in fact, pinot noir. Better still, over the centuries of evolution in the harsh, perpetually damp climate of England, the clone had become resistant to powdery mildew. As a happy result, he never has to spray sulfur or chemical fungicides or insecticides in the vineyard (though he adamantly refuses to apply for organic certification, the vineyards certainly would qualify).

This delightfully dry, creamy, complex, and ageable sparkling wine is made under the same exacting conditions as vintage champagne. These wines are extremely limited in production, rarely submitted to critics for review, and nearly impossible to find here in the States. The Lamiable family’s first parcel of vines was planted in Tours-sur-Marne in a place called “Les Vignes des Meslaines” that has become their signature plot, with a percentage blended into nearly all of their wines as a sort of calling card (similar to Pierre Gimonnet and their “Cuis” site). Tours-sur-Marne is a small wine-producing village in the pinot noir dominant Montagne de Reims, just east of Aÿ and south of Bouzy. Set in the shadow of the 70-million-year-old Mont Sinaï, the tallest point of the Montagne de Reims, this village inherits a cross-section of geology focused on chalk, sand, clay, and limestone that lends the area’s Champagne their characteristic features.

This zero-dosage Champagne clocks in at 60% pinot noir and 40% chardonnay, with a little less than half coming from a perpetual reserve, crafted solera-style and going back a few decades. As the bottle settles, creamy notes of toasted hazelnuts and buttered brioche reveal themselves, with fierce tension and uplifting acidity throughout. Robert's family takes the very best of four plots – including the revered Les Chétillons, alongside neighboring Les Vaucherots, Les Coullemets du Midi, and Les Finciarts – to forge this “Terre du Mesnil'' cuvée. The village of Le Mesnil sur Oger sits entirely upon east-facing slopes, thickly sheltered by forestland on the hills above – allowing chardonnay to slowly ripen fully, never sacrificing the elegant, high-toned aromatics or the piercing acidity for which these wines are so prized.

The fourth generation of the Robert’s family, Bertrand, still runs the show (with his daughter, Clare, joining him in 2013) carrying on the traditions of his great-grandfather Henri, who began farming the land just after the first World War. Bertrand has never known a life away from the chalky limestone hills of Le Mesnil – his first memories are centered around playing amongst the chardonnay vines and smelling the barrels in the family’s cellar – carved by hand from chalk by his forebears. There is something in these wines that links to the family’s history – as if you can taste a piece of their home, and their style is guided by their generations of careful farming and thoughtful assemblage – all in homage to this land that has shaped them as a voice of the soil itself.

Just pure, romantic stuff, to be certain… with a flavor profile to match! He embarked on a series of internships and apprenticeships across all aspects of the wine industry, with a particular focus on Champagne – all to arm himself for the day when the land would become his. That time is now, and Régis has taken serious effort to ensure that the moment is not squandered. Like many growers, the focus here is on the land itself. The conversion to biodynamic and sustainable farming began in 2011, and the dividends have been obvious. With an average age of 33 years old, these vines are in the peak of health, in each of the over 35 different parcels spread across the villages of the Marne Valley.

The Marne’s typical limestone clay soils are responsible for the power and depth of these wines, as is of course, the Marne’s favorite son – pinot meunier. Together, these characteristics highlight the up-and-coming villages of Cuchery, Baslieux, Leuvrigny, Troissy and Mareuil le Port – where all of Poissinet’s grapes are grown. The house’s first release was a 2013 vintage cuvee disgorged in early 2017. They intentionally started very slowly, with only one wine to start, in order to build up their perpetual reserves in order to create a house style in-line with Régis’ vision. Now, a handful of years in, the style is starting to take shape.

This cuvee is a blend of 84% pinot meunier and 16% chardonnay – blended from several vintages, including a solera-style reserve wine that accounts for some 40% of the finished blend. On the palate, golden apples and cinnamon take shape, with a bright citrine acidity carrying the wine to a clean and soft finish. This is a wine that is young and powerful in its youth, but with the depth and structure to allow for exceptional development over the next several years. Though not all too common, maintaining the vineyard in this traditional manner is ecologically sound and pollutes far less than herbicides, helping to balance variations in humidity. “Yesterday we were called old-fashioned, today we're avant-garde,” Didier has explained. Their method adds stress to the vines without damaging them, instead training the vines to grow stronger, healthier, and more hearty with time. The results of their efforts are wines crafted in classic Bouzy power, with unmatched depth, structure, and intensity. These are some rare and compelling Champagnes with some of the most powerful structures I’ve ever encountered, without the customary triple-digit price tag wines of this caliber often require.

Didier and Thierry practice block malolactic fermentation in their winemaking facilities to preserve the serene brightness and freshness that malic acid evokes. They actively pursue minerality, which is an abundant quality for Cote des Blancs wines but less apparent in this section of the Montagne de Reims, where powerful fruit backbones typically define the style of Bouzy. To highlight and preserve their individual lots, the brothers vinify each parcel’s fruit separately in thermoregulated stainless steel, helping identify each wine’s individual characters before blending. In the grand finale, they practice virtuous patience to allow it all to come together with 5 years aging on the lees – providing ample time for the citrine acidity and chalky minerality to integrate to perfection. These are old chardonnay vines planted on clay and silt above Cretaceous era limestone chalk.

Hubert Soreau is known as a quiet and thoughtful man, who walks among his vines as though he strolls through a garden. Each vine is known and regarded in turn, with thoughtful pruning (in the Chablis-style), and no use of herbicides or pesticides. All the fruit is hand harvested, as they were a thousand years ago, vertically pressed, and fermented in large oak barrels cut from the nearby forest in Hautvillers. The wine is aged on the lees for over 8 years, and quite uniquely, spends that initial bottling under natural cork, instead of the far more popular crown “soda pop” caps used by most every house today. The wine is Brut Nature – meaning that no added sugar is introduced after the time on the lees, just topped off as needed with enough Champagne to ensure the neck is filled before the final corking. And though we’ve featured this once before, we’re simply thrilled to have a little restocking moment with you all. A little backstory to catch all you new folks up… Guillaume Gaucher had become disheartened by decades of the family’s grapes being sold to the massive, lower quality, and bulk-produced Champagne houses like most of their neighbors. Growing up working the land and growing the grapes – he just knew that the quality was there to make delicious Champagne. Eventually, he convinced his father to no longer sell the fruit, and become winemakers in their own right, instead. It was then and there that Champagne Bernard Gaucher was born.

Third-generation grape grower and first-generation recoltant-manipulant (grower producer), the family’s vineyards are in Aube, with separate plots near the villages of Arconville, Urville, and Ailleville, east of the city of Troyes. These plots are planted on the region’s famous Kimmeridgian soils, similar to those found in Chablis to the south. Like many of Champagne’s lesser-known villages, the quality of product can vary greatly among these vineyards, but with the right soil, thoughtful farming, and painstaking detail – top-notch wine can absolutely be the result!

Years later, this house is still vastly unknown, even in the hardest-core Bubbles Monster homes (yes, perhaps even yours!), but I’ve loved the wines from the first sip to now – and I have the greatest of hopes for their future. This is a delicate, fruity, and entirely pleasing wine that also hits all the geeky sweet spots. Creamy and pinot-noir-driven fruits with a wonderfully balanced acidity and just the right amount of frothy bubbles… toasty, zesty, and tingly, all in equal measure. The clay and limestone lend pinot the chance to fully ripen, without sacrificing that almost Chablisienne minerality and freshness. An uplifting jolt of some 10% chardonnay further delineates the wine’s mineral spark and helps this sing at a high frequency. Myriad stone fruits – like bright and crunchy yellow plums – plus croissant dough, golden apples, and a creamy, milky aroma that makes me think of rich condensed milk or fresh cream…it is so good! As I said, it simply hits all the sweet spots, especially at our price! Two years on the lees allows a nice amount of integration and development, and a Brut dosage of 10 grams per liter heightens the fruitiness of the pinot noir. Fun stuff that you’ll virtually never turn down – a glass or two, a bottle or two – this is one of those bottles that seemingly fits all situations. The grapes are pressed in a refrigerated, supremely delicate, press designed to limit the amount of oxygen that can enter the juice in the process. Fermentations are in both barrels and steel tanks, followed by exceptionally long aging (a minimum of 3-4 years on the lees) for all of his wines (and longer still for his top cuvees and vintage wines). Advocate’s chief Champagne expert, William Kelley, had this to say:

“Francis Egly has produced another profound Champagne with the 2013 Brut Grand Cru Millésime. If the monumental 2008 stands out for its power, structure and intensity, the 2013 is distinguished by its harmony, finesse and completeness; both vintages are very great wines but thus quite different in style. Wafting from the glass with scents of Anjou pear, crisp yellow apple, freshly baked bread, clear honey, iodine and fresh mint, it's full-bodied, ample and pillowy, with a layered, concentrated and effortlessly balanced core of fruit, uniting precision and sensuality to compelling effect. Girdled by racy acids and animated by a delicate pinpoint mousse, it concludes with a long, penetrating finish. Is this the most elegant wine Egly has produced to date? It's certainly among the most compelling that this high quality but initially underrated Champagne vintage has delivered.”

Worth noting too is his recommended drinking window – basically now with the potential for drinking as far down the road as 2050! Right out the gate, these wines were so good that Napoleon gave him a medal… seriously. In 1835, his son, Adolphe took charge and implemented some monumentally important innovations that would forever change the world of wine. Along with Dr. Guyot, they implemented the radical notion of training vines in orderly rows (Guyot pruning is still one of the most dominant methods used to this day). To reduce Champagne bottles' tendency to explode, he worked with a chemist to begin accurately measuring sugar levels in alcohol, to great effect. And lastly, he invented the muselet, more commonly known as a Champagne cage, helping to secure the corks of nearly every sparkling wine in the world ever since. Beyond all that, their wines are some of the most revered sparkling wines in the world today – just as they have been for decades.

The business left family hands toward the end of the 1800s, and eventually was bought by the Chiquet family in 1974. Today, Jacquesson is jointly managed by Jean-Hervé and Laurent Chiquet – with Jean-Hervé, once the cellar master, running the business and his younger brother Laurent serving as the chef de cave. While Jacquesson does purchase fruit (20 acres from long-standing contracted growers), the majority of their fruit (roughly 80% of their production) is grown themselves – with a focus on the grand cru villages of Aÿ, Avize, and Oiry, and in the premier cru villages of Hautvillers, Dizy, and Mareuil-sur-Aÿ. This wine hails from their estate-owned and biodynamically farmed plot of Champ Cain in Avize. Here, some 12,000 chardonnay vines are planted on clay, sandy-loam soils atop immense blocks of Campanian chalk at the bottom of the hill facing due south. The Jacquesson house has developed a reputation for the lowest yields anywhere in Champagne, opting for concentration and quality over quantity – leading to a production of less than 900 cases (including magnums) for this spectacular Champagne.

Certainly, a wine of this stature, pedigree, and timelessness fetches a hefty price tag – the most expensive we’ve ever featured on Last Bubbles. And yet, this is truly a jewel to be treasured, and one you can’t find anywhere else in the U.S.! The 2004 vintage of this same wine currently fetches nearly $130 more per bottle than our extraordinary price today. Within the last two generations, they’ve grown their reach to holdings in Burgundy (Domaine Jacques Priueur) in 1988, and then in 1992, they added 18 hectares of idyllic Pomerol parcels upon acquiring Château Rouget in Bordeaux. Nearly two decades later, industry savant and family patriarch, Jean-Pierre Labruyère, passed his holdings down to his son, Edouard, in 2008.

It was Edouard who added these premium Champagne vineyards to his family’s portfolio, deepening their efforts to practice sustainable, world-class agriculture methods while expanding into a whole new world of impeccable wines. This Brut Nature is a quantifiable knock-out, made solely from pinot noir coming from their vineyards in Verzenay – from a grouping of plots that were a long-time staple for Dom Perignon’s best bottles, for goodness sake! Between the clay and limestone soils, the terroir and climate here create an ideal spot for perfectly balanced, pure pinot noir – with the clay’s warmth deepening the pinot’s classic red berry notes of raspberries, cherries, and plums, and the limestone contributing to the saline and mineral characteristics that ultimately make for a bright and linear tension that carries into a lengthy finish.

Undergoing full malolactic fermentation, and then a generous six years aging on the lees, this non-dosage wine contains plenty of weight and depth, with a luminous creaminess that’s light and airy, almost akin to an ultra-lightweight whipped cream. Although it’s a newer wine, this portrays an impressive amount of self and precision with clear displays of Burgundian vinosity to it…and it’s no surprise that we had to snap up as much of it as we could get our hands on (yes, OK, with the deepest of desires to get even more access to this incredible, new-to-us producer’s wines in the future!). This is that rare combination of Champagne pedigree without history (and the prices that often go with it)! That’s just how my brain works, and this really is such a unique and spectacular bottling! Only 83 cases were made and the fact that we were able to acquire twelve of those is a remarkable accomplishment worthy of song!

Pierre Déthune and his wife Sophie run this classic Ambonnay estate – just as the previous generations have all the way back to 1610. Like each of his forebears, Pierre has created his own style of Champagne – rooted in tradition, yet ever-evolving – the one constant being the grassy lands of Ambonnay. This bottling is the perfect nod to that tradition – opting to secure each cork in place by hand, using a rough-spun twine in a method that predates the muselet (Champagne cage) that has dominated nearly every bottle of bubbly for the last hundred years. The twine is carefully cut by scissors, et voilà! Champagne perfection.

This cuvee is crafted from equal parts pinot noir and chardonnay – the very best plots from the family’s holdings throughout Ambonnay. The individual varieties are fermented in 205 liter Champagne barrels, undergoing malolactic fermentation as well before blending and bottling. Six plus years on the lees allows for additional development, and an Extra Brut level dosage of just 5 grams per liter allows for a pervasive freshness to temper the wine’s inherent richness.

Powerfully rich, impressively intense, and playfully elegant, this Champagne is exceptional even in its ‘youth’ (we feel Champagne aging truly begins at dosage, though there is undoubtedly plenty of nuance created from the time in both barrel and on the lees)! The nose immediately bursts with scents of marzipan, toasted brioche, and brûléed apples. With time, a bright minerality breaks through – showcasing Ambonnay’s classic chalkiness, and added elements of lemons, white flowers, and Valencia oranges. The mouthfeel is lusciously creamy, with a stable and full mousse that holds up impressively – leading into flavors of dried cherries, poached pears, honeyed walnuts, oyster shells, nougat, and a finishing whisper of crushed mint. The wine refuses to leave – nearly a minute later and the warm, velvety sensation of sheer joy is still dancing across the tongue!

As the second oldest family in Ambonnay, and over 400 years of grape-growing history in the region… this nevertheless stands tall as an icon of the estate. Comparisons to Krug don’t come lightly, but I’ll say again… this wine has the resume that would rival any producer in Champagne. When he began purchasing formerly pristine vineyard land…all recently devastated to barren wastelands by the ravagings of phylloxera, it was certainly the latter. He purchased a number of plots, under the strict parameter that all parcels fell within a few hours by horse from his home in Oger – so that he could carefully manage their re-planting and continued upkeep. Then, in the aftermath of a global depression – he dug in further still, adding a winegrower’s house in the heart of Avize – complete with press, casks, and a cellar from the 1800s. More madness, it would seem. And yet now, over a century later, he certainly must be recognized as a pioneer as the Bonville family has become a model amongst prosperous Champagne families. Not far from their base in Avize, you’ll find the vines of Le Levant – alluding to the rising sun and the lands southeast of Avize village. Here, the grapes ripen and mature earlier than elsewhere in the village, producing a beautiful roundness, and spicy and fresh mintiness. Proliferating notes of lemon, chalk, and crisp, green apples, with a zesty orange peel sensation, and plenty of fresh lemongrass and spearmint – all complemented with yeasty, sourdough notes, and a creamy richness…this is complex, and full of verve, and exceptionally drinkable throughout.

While it may be one of their first offerings under this new venture – the experience and careful precision of generations of grape-growing and winemaking is evident here…as promising of an entry into the world of Champagne as we have seen. From our favorite Champagne-born, self-professed reformed wine snob Brice Baillie, this came about while tasting with one of his top sources for natural, off-the-beaten-path wines – the eclectic Randi winery in Italy’s Emilia-Romagna region. They primarily focus on native varieties, naturally made, in the traditional, and yet suddenly hip and modern, style. The wine uses the longanesi grape, a grape of Middle Eastern origin that found its home in nearby Ravenna, back in the days when it was the capital of the Western Roman Empire. The longanesi vines look more like a bramble bush than a modern-day grapevine, and it was only some 70 years ago that a man named Antonio Longanesi re-discovered the grape growing up a tree and decided to try and cultivate it in his family’s vineyard. The vine thrived and spread throughout the region, and eventually, in 1999, the local winemaking consortium decided to officially name the grape after him.

Brice’s wife, Nasha, came up with the name Après Sol, and from there, they enlisted their friend (and designer) Sam, to piece together the label. The inspiration was the ‘70s-era posters for ski resorts, transformed from a winter scene to the backdrop of a sunny locale such as Miami or Venice Beach – Brice’s adopted home. They never intended to sell this far and wide, and indeed, we are the first outside of Los Angeles to get access to this wine! Only 1,000 cases were made in total, mostly for local restaurants and wine shops in SoCal. It has a nicely balanced, completely captivating palate that encapsulates both savory and sweet fruit sensations, where every note of sweetness is immediately harnessed by a drying bite of fresh herbs.
